Aceymac
The Acey Mac apple is juicy, sweet and crisp. It is an excellent apple for snacking, and is cousin the McIntosh. Excellent for fresh eating and pies.

Cameo
The Cameo has a creamy orange color with bright red stripes. It is firm and crisp and has a thin skin with a tart sweet flavor. It makes a great fresh eating apple. Excellent for salads, pies, sauce and baking.

Cortland
Developed at the New York State Agricultural Experiment Station in Geneva in 1898, the Cortland is a multi-purpose apple that is juicy and sweet with a hint of tartness. Excellent for eating, salads, sauce, pies and baking.

Empire
The Empire has a sweet-tart flavor and is great for everything. Excellent for eating and salads. Good for sauce, baking, pies and freezing. Empire are probably the #1 apple in kid's lunches.

Fuji
Very sweet and very juicy with a very crisp, cream colored flesh. Excellent for eating and salads, good for sauce. Fuji apples are so sweet, that Fuji applesauce needs very little sugar.

Gala
Another apple popular with kids is the Gala, a new variety developed in New Zealand. It's got a juciy mild flavor. Crisp, creamy yellow flesh. Excellent for eating and salads.

Ginger Gold
The early ripening Ginger Gold is the perfect snacking apple. Buy them early in the season when this special new variety is readily available! A little tart - but sweet, with a crisp, cream colored flesh. Excellent for eating and salads.

Golden Delicious
This sweet apple is a special treat. own. Juicy with a mild sweet flavor and crisp, light yellow flesh. Excellent for eating, salads and sauce. Good for pies, baking and freezing. You can cut down the sugar in pies and sauces made from Golden Delicious apples.

Honeycrisp
This new variety continues to gain popularity since its introduction in the early 1990's. Juicy with a super crisp yellow flesh. Excellent for eating and salads. Good for sauce, baking & pies.

Jersey Mac
The Jersey Mac apple is a medium sized red apple with yellow/green splashes. Flesh is crisp and juicy with a tart flavor. This is our earliest apple, only available in August.

Jonagold
Jonagolds make are great for baked goods. This relatively new variety is a cross between the more mellow Golden Delicious and tart Jonathan Apple. Excellent for eating, salads, sauce and baking and frying. Good for pies and freezing.

Lady
Strikingly beautiful and generously brushed with a flattering red blush, the firm white flesh of the small Lady apple is crisp and relatively juicy. Prized for its attractive appearance, this very decorative winter apple offers a delicious sweet-tart flavor.

Macoun
The Macoun apple is extra sweet and aromatic. Very juicy tender, snow white flesh. Excellent for eating. Good for sauce and salads.

McIntosh
The McIntosh is one of the most popular varieties of apple. First discovered in 1811, people have been enjoying them ever since. McIntosh apples grow particularly well in The Hudson Valley's relatively cool climate! Sweet with a tart tang. Very juicy. Tender, white flesh. Excellent for eating, sauce, salads and pies.

Paula Red
With availability starting in August, the Paula Red offers the first taste of fall for many apple lovers. Tart and juicy. Crisp white flesh. Excellent for eating and sauce.

Red Delicious
Another very popular variety, the Red Delicious is a mildly sweet apple with a hint of tartness. Sweet and juicy. Crisp, yellow flesh. Excellent for eating and salads.

Rome
The Rome apple is an excellent cooking apples that holds it's tart flavor when cooked. Mildly tart with firm, slightly greenish flesh. Excellent for sauce, baking, pies, salad and freezing.

Stayman
Stayman apples are large to medium apples with a dull red skin often covered with a light russet. The flesh is very light greenish-yellow with a crisp texture and a tart, wine-like flavor. Excellent for applesauce and apple butter.
